The turkey club sandwich is a true masterpiece, taking a regular turkey sandwich and elevating it to a whole new level. I decided to downsize this magnificent turkey club sandwich and create adorable miniature turkey skewers. Each skewer is a work of art, adorned with bite-sized slices of turkey, tantalizing strips of bacon, delicate shreds of lettuce, savory cheese, and petite wedges of tomato, all nestled within tiny squares of bread.

To avoid the unfortunate sogginess that mayonnaise would bring by lunchtime, I devised a clever twist. Instead, I incorporated tiny pieces of avocado, imparting that same creamy texture as mayonnaise while offering an extra boost of essential vitamins, healthy fats, and, of course, an explosion of flavor.

After filling the main compartment of my lunch box with these little skewers, I filled one of the two side compartments with fries, the classic side to a club sandwich. I then filled the other with grapes to give the meal a sweet finish in a healthy way.

  1. Cook the bacon until slightly crisp so it will go on the skewer without breaking.
  2. Thread bread, turkey, avocado, lettuce, cheese, bacon and tomato until full.
  3. Divide the ingredients among your 4 lunch boxes.

  • 1/2 cup Lettuce
  • 1 cup Cherry tomatoes
  • 1 Avocado
  • 4 inch skewers
  • 4 cups Chips
  • 2 cups Grapes

Instructions

  • Cook the bacon until slightly crisp so it will go on the skewer without breaking.
