  • 1 cup (160 grams) cooked spinach, drained and roughly chopped
  • 1 tablespoon olive oil
  • 2 leeks, trimmed, rinsed, and thinly sliced
  • 2 cloves of garlic, minced or finely sliced
  • 3 large eggs
  • 1/2 cup milk
  • 3/4 cup heavy cream
  • 1 1/2 teaspoons freshly grated lemon zest (from one lemon)
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh tarragon
  • 1/2 cup (2 ounces) grated cheddar cheese
  • 1/2 cup (2 ounces) grated gruyère cheese
  • 1/2 cup cooked and peeled fava beans or sweet peas

  1. Start by gathering all the necessary ingredients.
  2. In a large bowl, whisk together the flour and salt.
  3. Place the butter and lard in the center of the flour mixture, ensuring they are lightly coated with flour.
  4. Use your fingers, a fork, or a spatula to gently incorporate the butter into the flour. Flatten the butter cubes between your fingers or tools until they are the size of small peas. The mixture should have a texture similar to cornmeal or breadcrumbs. You can also use a food processor and pulse several times until the desired texture is achieved.
