- Use the family favorite vegetables! My kids won’t touch a green bell pepper a mile away, but they love red bell pepper. You can easily swap out the green bell pepper for a red, yellow, or orange one, or if you don’t like bell peppers, you can add some corn, mushrooms, asparagus, or any other vegetables you want to serve in this delicious meal. .
- Go vegetarian! If you don’t have any sausage on hand or are trying to cut down on the meat, you can easily replace the sausage with additional vegetables of any kind!
- Increase the meat! My kids decided their favorite part of this meal was the sausage. They chose it and left the vegetables, of course. It left me thinking next time I’ll double the meat to be sure I get some too!
- Serve it loaded! After the skillet comes out of the oven, sprinkle on some shredded cheese and green onions and serve topped with sour cream and guacamole as a delicious potato-loaded meal.
- Change the seasonings! Feel free to replace the Garlic Parmesan Seasoning with your favorite seasonings (you’ll need about ¼ cup) or another mix. Once cooked, leftovers should be stored in an airtight container in the fridge and will keep for up to 5 days. They can be reheated in the microwave or oven at 425 degrees Fahrenheit until heated through. Although the microwave is faster, the oven method will ensure a better reheated texture. Leftovers can also be frozen for up to 3 months, thawed in the fridge overnight, and reheated as mentioned above.
Sausages and Grilled Potatoes
- Preheat oven to 425 degrees Fahrenheit and line a large baking sheet with aluminum foil.
- Use a cutting board and sharp knife to cut the potatoes in half, cut the sausage into thick slices at an angle, cut the carrots in half, remove the seeds and chop the green bell pepper, and quarter the shallots.
- In a large mixing bowl, combine the prepared potatoes, sausage, carrots, bell pepper, and shallots.
- Drizzle the avocado oil over the mixture and toss to coat everything well. Sprinkle the Garlic Parmesan Seasoning over all ingredients and stir until everything is coated and well blended.
- Pour the mixture onto the prepared baking sheet and spread it into an even layer.
- Bake for 30-35 minutes or until a fork goes easily through the potatoes and carrots and the rest of the ingredients are charred to your preference. Remove from the oven and serve hot.

- 1 big green pepper seeded and diced
- 3 little shallots dismembered
- 3 tablespoons avocado oil
- 1 oz packet garlic parmesan wing seasoning mix
Instructions
